You youngsters need to see some older movies -- there were a few good ones made before the 90s, you know... And good scores!
I haven't owned all of these soundtracks, but I'll just take ten of my favorite original/background scores (as opposed to song scores, either original for the movie as in a musical or "found" as in "American Graffitti" or "Pulp Fiction" or even "2001" (which threw out a score by Alex North and replaced it with the "temp" track).
You'll see one name a lot. There a lots of candidates, but I have to have listened to the music separately or seen the movie a LOT. (I was thinking of including Randy Newman's score for "A Bug's Life", but I've only seen it twice and the movie is so good, I forget to listen! That could actually apply to all his Pixar background scores.)
1. Once Upon a Time in the West -- Ennio Morricone
2. Obsession - Bernard Herrmann (this was the first record I ever bought for myself, along with ELO's "A New World's Record)
3. The Day the Earth Stood Still - Bernard Herrmann
4. Citizen Kane -- Bernard Herrmann
5. King Kong (1933) -- Max Steiner
6. The Adventures of Robin Hood - Ernst Korngold
7. High Noon -- Dimiotri Tiomkin -- the greatest Western composer of all was, from, I don't know where, but he was named "Dimitri" and not "Tex." He also did a wonderful score for the "answer" film to "High Noon", "Rio Bravo". (Howard Hawks HATED "High Noon")
8. Yojimbo -- Okay, don't know the name offhand, but trust me, very cool.
9. North by Northwest -- Bernard Herrmann
10. Anything by Nino Rota! (Haven't really "listened" to any one single film, with the possible exception of "The Godfather" films, but believe me, this guy belongs on the list!!!)
Honorable mention (composers): Elmer Bernstein, Danny Elfman, Jon Brion (absolutely brilliant work on "Punch Drunk Love"), Alex North, Miklos Rosza, Ryoichi Sakamoto/David Byrne/ and ? ("Last Emperor").

Where O where O where is THE BIG LEBOWSKI????? Apart from 'he who is always named' it's got a cracking Dylan track, Capn Beefheart, Nina Simone, and a brilliant Kenny Rogers track...it's GODLIKE!
Also...Dumb and Dumber OST is real good, as is Willy Wonka and the Chocolate Factory (''cheeeer up charlie'')...I'm not joking by the way, Im obsessed with that film.

Willy Wonka And The Chocolate Factory is the scariest movie ever made.
Speaking of Bernard Herrmann, I quite the like the "Jane Eyre" score.
I also really like the "Laura" soundtrack. That's a theme that, much like the one in "High Noon" gets stuck in your head, in a good way.

It's a radiation vibe I'm groovin' on
Some more great ones:
The Harder They Come
A Hard Day's Night
Storytelling
One Trick Pony
One From The Heart
Nashville
Superfly
Paris, Texas
Grosse Point Blank (ok this last one is just a collection of songs used in the movie, but when it is a collection compiled by Joe Strummer it takes on a life of it's own)

Just had a look at what others Ive got...
Rugrats the movie (what? it was cheap!) one track good, other tracks evil.
Clockwork Orange....weird psychedelic Beethoven and Singign in the Rain = good.
The Long Good Friday, for the excellent theme, and a shite shite cover version of London's Calling (so shite it's good).

In the category of soundtracks that anthologize existing songs:
UNTIL THE END OF THE WORLD (just great, really you must all own it)
GROSSE POINT BLANK
SWINGERS
ROCK 'N' ROLL HIGH SCHOOL
and especially...
AMERICAN GRAFFITI
The last got me totally hooked on the music of that era. I'd Add MAGNOLIA, too, though there are some rough spots there, and it's a bit weird being nearly all Aimee but with those few additions.

A few things --
I'm tempted to add "Superfly" to the list of my all time favorite scores, and definitely would've put it near the top if I was thinking of it. Interestingly, I finally saw the movie for the first time recently. I had fairly low expectations, but it's still a pretty dull movie. (There are some really good "blaxsploitation" films of the ones I've seen, but this wasn't one of 'em! See "Truck Turner" with Issac Hayes first!).
Re: Across 110th Street -- this is actually the theme song to a pretty decent thriller starring Anthony Quinn and a young Yaphet Kotto. Interestingly, the version that's in the movie is different and not nearly as good as the amazing rendition used in "Jackie Brown." (Both are by Bobby Womack, though.)
"Across" is available on DVD (that's how I saw it), it's marketed as blaxsploitation, but it's more like a cross between a New York set remake of "In the Heat of the Night" and an ultra dark heist-gone-wrong movie.
Here are ten favorite scores that use music that may have been from elsewhere, or not. Concert films are excluded (if so, "Stop Making Sense" and "The Last Waltz" would definitely be on there).
1. West Side Story
2. Help
3. The Graduate
4. An American in Paris
5. Kiss Me Kate
6. Pulp Fiction
7. Jackie Brown
8. Hedwig and the Angry Inch
9. Goodfellas
10. 1776 (yes, you reading right -- too faithful, stagebound movie of a good play, it's the subject of near fetishistic interest by me and a few friends...definitely worth renting the DVD if you're interested in seeing a musical comedy-drama about the signing of the declartion of Independence. Patriotic in a good way. Composer Sherman Edwards was a Brill Building guy who wrote "Wonderful, Wonderful" for Johnny Mathis....)

Mostly lots of seventies type classic rock (Layla, I think), a little Phil Spector, some Italian music -- I chose it as much for how well it worked with the movie as for the quality of the music.

Lots of good ones already mentioned -
American Graffiti and Harder They Come beign my two all time favorites - and O Brother would be right up there as well.
Two more not mentioned -
Rockers - great Reggae movie and soundtrack
LA Confidential - Nice 40's early 50's Jazz/Pop Noir - too short
bobster - the Good Fellas soundtrack looks good, but the Casino soundtrack has about 3 times as much music in a very similar vein.
